New Yorkers can “escape” the sweltering heat for this cocktail holiday with the rum experts at The Rum House and sip on their house signature Colada, The Escape, created by Chief Creative Officer Kenneth McCoy.
The Escape ($14) whisks you away to tropical climates with El Dorado Dark Rum, Coconut Crème, pineapple juice and sweet vermouth spiked with cloves.

Recipe by Kenneth McCoy

2 oz El Dorado Dark Rum
1 oz Pineapple Juice
1 oz Coco Lopez
¾ oz Sweet Vermouth
Pineapple slice and cherry for garnish
Instructions:
Shake first three ingredients with ice
Pour into a Goblet glass over fresh ice
Add Sweet Vermouth floater
Garnish with pineapple slice and cherry on a pick
