.75 oz. Boulard ‘Grand Solage’ VSOP Calvados or Laird’s 7 ½ Old Apple Brandy
.25 oz. Benedictine
.25 oz. Grand Marnier
1 bar spoon (or 1/8 oz.) Campari
4 oz. Brut Champagne (Non-Vintage)
Add all ingredients except Champagne, to mixing glass. Add ice and stir briefly to integrate and chill. Strain into Champagne flute or coupe. Add the Champagne. Lemon peel twist to release oils on top of glass, then discard.

1 oz. Great King Street ‘Glasgow Blend’ Scotch Whisky
1 oz. Satoh Shochu
.5 oz. House-made Pear syrup
.5 oz. Lustau ‘Don Nino’ Oloroso Sherry
4 dashes house-made cocoa bitters (orange bitters infused with cocoa nibs for one week)
Add all ingredients to mixing glass. Add ice and shake quickly to integrate.
Strain into ceramic cup filled with crushed ice. Fresh raspberries, blackberries, blueberries, for garnish.

Old-Fashioned (Mid-Twentieth-Century Variation)
2.5 oz. Elijah Craig Bourbon
2 dashes Angostura Bitters
1 dash Regans’ Orange Bitters No. 6
1 demerara sugar cube
1 orange slice (thin half wheel)
1 brandied cherry
Add orange slice and one brandied cherry to old-fashioned (lowball) glass. Add sugar cube and bitters, then muddle to dissolve sugar.
Add whiskey and stir, making sure sugar is dissolved. Add large ice cubes and stir briefly to integrate. Orange wheel and brandied cherry “flag,” for garnish.
