While most NYC restaurants/bars have been focusing on revamping their summer cocktail menus, Chelsea hotspot No.8 has gone above and beyond by adding just one extravagantly presented $45 summer cocktail to the menu – “The Flaming Tropics.” You may ask yourself how is it possible to have a cocktail that costs more than your Trader Joe’s groceries? This over-the-top cocktail for two is made with Absolut Elyx, a silky texturized vodka who’s taste is heightened by the old copper catalyzation process and is served in a beautiful copper pineapple. It’s aesthetic is inviting enough to get that cute guy/girl across the bar to come on over and share it with you. For those of you who want to entertain at home, check out the signature cocktail recipe below but trust us, it isn’t the same as having it under No.8’s signature bungalow palm trees with your summer love to share it with because everyone is all about the summer fling!
No.8’s “The FlamingTropics”

*Serves Two
Ingredients: Absolut Elyx, Raspberry Ginger Syrup, Lemon Juice and Soda
Directions:
1) Prepare a cocktail shaker and an Absolut Elyx copper pineapple with crushed ice.
2) Place 4oz of Absolut Elyx, and 1oz each of Raspberry & Ginger syrup (preferably house-made, but any local craft company such as Wilks & Wilson will work perfectly)
3) Add the juice of half a lemon, shake vigorously and pour into the chilled pineapple. Top with soda, or if you have nowhere else to go, Champagne.
4.) Enjoy with reckless abandon.
