The Stayton Room at The Lexington Hotel in New York City has recently debuted its new seasonal menu for fall, featuring craft cocktails perfect for the chilly temperatures. All cocktails were created by The Lexington Hotel’s Food & Beverage Director Frank Caiafa, who previously served as Beverage Director at Peacock Alley and La Chine at the Waldorf Astoria in New York City.

STAYTON’S SECRET

1½ oz Plantation Original Dark Rum
¾ oz Fresh Lime Juice
1 oz Tempus Fugit Crème de Banane
½ oz Lustau ‘Don Nuno’ Oloroso Sherry
1/4 oz. Cardamom Infused White Rum
Glass: Coupe
Add all ingredients to mixing glass. Add ice and shake well.
Strain into chilled cocktail glass. Garnish with brandied cherry.

GLACIAL NEGRONI

1.50 oz. Broker’s London Dry Gin
1 oz. Kleos Mastiha Liqueur
1 oz. Cocchi Americano Aperitif
Glass: Rocks
Add all ingredients to mixing glass. Add ice and stir for 15 seconds to integrate.
Strain into Old Fashioned glass filled with fresh ice. Rosemary sprig and Lemon peel, for garnish.

CINFUL CIDER

1.5 oz. House-infused Cinnamon Tequila
.50 oz. Demerara Syrup
3 oz. Doc’s Hard Apple Cider
Glass: Highball
Add all ingredients to mixing glass except Cider. Add ice and stir for 5 seconds to integrate. Strain into highball glass. Add ice and top with Cider. Freshly grated nutmeg, for garnish.

BEANS & BEANS

1.5 oz. Stolichnaya Vanilla Vodka
1.5 oz. Patron Café XO Coffee Liqueur
1 oz. Cream
Glass: Rocks
Add all ingredients except cream to Old Fashioned glass. Add pellet ice. Top with half and half.

BAGPIPER

1.5 oz. John Barr Reserve Blended Scotch Whisky
1 oz. Pama Pomegranate Liqueur
1.5 oz. Fresh Orange Juice
3 whole Cloves
2 dashes House-made Orange Bitters
Glass: Cocktail
Add all ingredients to mixing glass. Add ice and shake well.
Fine-strain into chilled cocktail glass. Clove-spiked orange coin, for garnish.

LEX OLD FASHIONED

2.5 oz. Ragtime Rye Whiskey, hand-selected single-barrel, Applejack Barrel Finished
1/3 oz. Demerara Syrup
3 dashes House-made Cocoa Bitters
Glass: Rocks
Add all ingredients to double rocks glass. Add ice and stir for 15 seconds to integrate. Brandied cherry and Lemon peel, for garnish.

1.5 oz. Evan Williams Single Barrel Bourbon
1 oz. Taylor Fladgate Ruby Port
1 oz. Carpano Dry Vermouth
.50 Luxardo Maraschino Liqueur
3 dashes Peychaud’s Bitters
Glass: Coupe
Add all ingredients to mixing glass. Add ice and stir for thirty seconds.
Strain into chilled cocktail glass. Lemon peel, for garnish.
