Ingredients:
1 cup milk
2 whole cloves
1 whole cinnamon stick
1 vanilla bean
6 egg yolks
½ cup sugar
1 cup Aged Brennivín
1 cup cream
5.3 oc. Icelandic Provisions skyr (one container)
¼ cup sugar
Directions:
Step 1 Bring milk, cloves, cinnamon and vanilla to boil and simmer for 30 sec. Cover and let stand for 10 minutes and strain.
Step 2 In a mixer whip egg yolks and ½ cup sugar until fluffy. Poor the milk mixture in slowly. Put in a pot and bring to about 170° Fahrenheit for about 3 minutes or until it thickens a little.
Step 3 Add Aged Brennivín and cream to the mixture and cool down to about 38° Fahrenheit.
Step 4 Whip skyr and ¼ cup sugar together and in a mixer blend into the rest of the cooled down mixture.
Step 5 Season with freshly grated nutmeg and lemon zest.
