Swift Single Malt is twice-distilled in the Swift’s Dripping Springs facility from 100% Scottish malted barley, with tight cuts taken off of hand-hammered copper pot stills from Portugal to fine tune the spirit by taste.
Modeled after a traditional Speyside Scotch, Swift Single Malt is made with water that is controlled (down to the molecular level) to match the composition of Scotland’s water, and is never chill-filtered. Instead the Swifts rely on maintaining flavor using its malt, and by aging each batch in Kentucky Bourbon barrels, which were hand selected by the Swifts on the Bourbon Trail, and finished in Oloroso sherry casks straight from the bodega in Spain, one of the most sought after whiskey casks in the world, and the only casks being put to use for whiskey in the States. Each barrel and cask is coopered in house by Nick using only sustainable methods. From the casks, Swift Single Malt is hand bottled and labeled by the couple.
Swift Distillery will be launching a limited edition Swift Single Malt for the holidays. Nick and Amanda are patiently putting an extra-fine finish on a special batch of whiskey using highly sought after Sauternes casks from Bordeaux, France. Swift will be the first in the US to offer a Sauternes-finished single malt.

.5 oz Yellow Chatreuse
.5 oz lime juice
1 dash Angostura bitters
Pour ingredients into shaker, ice, shake and strain in to a Martini glass.

1.5 oz Swift Single Malt Whiskey
.5 oz Apricot liqueur
.75 oz lemon juice
.25 oz Grenadine Syrup*
2 dashes grapefruit bitters
Pour ingredients into shaker, ice, shake and strain in to a tall glass with crushed ice.
(Garnish with fresh berries and/or cherries)
*Grenadine syrup can be made by heating pomegranate juice and adding an equal amount of sugar, turn off heat then stir. Add a couple drops of orange flower water to elevate the cocktail.

.75 oz Sweet Vermouth
.5 oz Benedictine
2 dashes Angostura bitters
Pour ingredients into a mixing glass, ice, stir and pour in to a chilled coupe or martini glass.

.5 oz St Elizabeth Allspice Dram
.25 oz Honey Syrup*
Pour ingredients into a shaker, ice, shake and strain in to a Nick & Nora or Martini glass.

*Honey syrup can be made by heating equal amounts of honey and water (do not boil) and stirring.
