DOM’S Miami Transforms into “Haus of Negroni” in Celebration of Cocktail Culture

Miami, FL – DOM’S, the beloved neighborhood bar in Miami’s bustling Brickell neighborhood, is excited to announce its upcoming activation, Haus of Negroni. From September 6th to September 30th, DOM’S will transform into a haven for cocktail enthusiasts, offering a limited-edition menu that celebrates the timeless Negroni and its role in the world of mixology. 

Haus of Negroni at DOM’S will feature a specialty menu with classic cocktails alongside creative spins on the Negroni. Throughout the month, DOM’S will also host pop-ups where bartenders from other Magic City hotspots will take over the bar and offer their unique takes on the iconic drink. Haus of Negroni is being hosted in partnership with Campari and Martini & Rossi and friends, as well as Fat Ice, who will be providing the premium craft cocktail ice.

At the heart of Haus of Negroni is a creatively designed menu curated by bar manager Mitchel Bauer that tells the classic children’s story of Pinocchio through 18 expertly crafted cocktails. Each drink reflects a different part of the tale, providing guests with a unique narrative journey as they sip their way through the menu. In addition to these story-driven creations, the menu also includes DOM’S ten signature cocktails. 

Cocktail highlights include:

Play All Day – A unique Miami twist on the Italian classic, this version of a Negroni has a spicy backbone, inspired by Pinocchio and Candlewick’s journey to Toyland. The mild spice comes from Hagave, an all-natural agave product infused with jalapeños.

Burratino – The name of this cocktail means “puppet” in Italian. It’s a variation of the classic Porn Star Martini, crafted with Lalo Blanco tequila, passionfruit, vanilla, topped with Prosecco.

Belly of a Whale – Inspired by the scene where Geppetto, Pinocchio and Candlewick are swallowed by the whale, this cocktail is a treat for PB&J lovers. Served in a miniature ceramic whale, it features peanut-infused Gray Whale Gin, strawberries and thyme.

Wishing on a Star – This cocktail is a twist on the classic banana daiquiri, blending the universal theme of wishing with the vibrant culture of Miami’s Cuban heritage and the American Dream. Featuring Bacardi Ocho and Havana Club Rum, it captures the essence of the dreams that many pursued when they moved to Miami in search of a better life for their families—much like Geppetto’s wish for Pinocchio to become a real boy.

Golden Coin – Drawing inspiration from the golden coins stolen from Pinocchio by the fox and cat, this cocktail is a classic cobbler. It features Martini & Rossi Vermouth, Rémy Martin 1738 Cognac and Amontillado Sherry complemented by fresh fruit. The result is a vibrant burst of flavor, yet light and refreshing.

The menu for Haus of Negroni is a classic retelling of a well-known story for our friends and family at DOM’S,” says Mitchel Bauer, bar manager at DOM’S. “One of the beautiful things about our bar is the neighborhood aspect. We’re a space where everyone can feel comfortable to relax away from home and work. This cocktail menu adds an extra dimension of fun to our existing program.

For those who enjoy more traditional drinks, the menu features Italian classics like the Negroni Rosso and Negroni Bianco, with alcohol-free versions crafted using Martini & Rossi, Pathfinder and Ritual. Guests can also enjoy low ABV options like the Aperol Spritz and a selection of vermouths paired with soda. All cocktails are priced between $12 and $24, depending on the spirit.

DOM’S has always been more than just a bar; it’s a community hub where people come together to share great drinks and great company. Throughout the month, DOM’S will host a couple of pop-up events featuring guest bartenders who will showcase their own variations of the Negroni. These events, running from 7 PM to 10 PM on their respective dates, include:

  • September 9 – Juju Ospina of Jolene Sound Room
  • September 16 – Marco Pastanella of Bar Kaiju with Federico Niccolai of LPM
  • Additional pop-ups to be confirmed

In addition to Haus of Negroni programming, DOM’S will participate in Imbibe and Campari’s Negroni Week from September 16 to 22, an annual event that celebrates the classic cocktail while supporting Slow Food’s mission to foster a more equitable and sustainable food and beverage world.

DOM’S is located at 1010 Brickell Avenue #200A. The bar is open Sunday through Wednesday from 5PM until 12AM, and Thursday through Saturday from 5PM until 2AM. For more information and event updates, follow along on social media at @domsmiami.
