Agua Restaurant & Lounge – Mango O’Clock
Cocktails at this aquatic-themed restaurant located near Seven Mile Beach are concocted under the direction of Bar Manager, Simone Pagnozzi, who started at Agua in September 2014 and became a Brand Ambassador for Stolichnaya Premium Vodka in the Cayman Islands after winning the company’s 2015 mixology competition.
Mango O’Clock:

1 oz Green Tea Havana 3 Rum
1 oz Apricot Brandy
¾ oz fresh lime juice
¾ oz homemade simple syrup
1 oz fresh mango puree
1 oz Gosling Dark Rum (floater)
Directions: Shake all ingredients, except for the Gosling Dark Rum, together. Double strain into a 12 oz highball glass over ice. Top with Gosling Dark Rum and garnish with an orange twist and mint.

Kaibo – Smoking Gun Cocktail
Located in Grand Cayman’s Rum Point, Kaibo boasts a Rare Rum Lounge, where diners can sample an unrivalled collection of rums from all over the world, hand-selected by owner and rum connoisseur, Daniel Petts. Artisan cocktails, like the Smoking Gun, are prepared by the talented team of bartenders, which can be savored while relaxing in the lounge area.
Smoking Gun Cocktail

2 oz Ron Zacapa rum
1 oz house-made Cola Syrup
Dash house-made coffee bitters
Directions: Shake all ingredients over ice, strain into large glass corked bottle. Using Bourbon soaked oak chips, fill the bottle with smoke and leave it for a minute to infuse in the sealed bottle. When ready, pour over ice and enjoy.

Le Soleil d’Or – The Spicy Farm Cocktail
Located on the secluded island of Cayman Brac, the Cayman Islands’ only beachside farm-to-table destination, Le Soleil d’Or, offers an array of flavorful drinks using ingredients harvested from the property’s 20-acre organic farm. Expertly prepared by the skilled hands of Angela “Angel” Robledo, who started her career as a flair bartender in 2004 and has since won numerous mixologist competitions in the Cayman Islands, the property’s cocktails, like the Spicy Farm, are truly unforgettable.
Spicy Farm

2 oz Star Fruit-infused White Rum
3 oz homemade Green Juice
Directions: Pour all ingredients into shaker first then ice. Shake well and pour into a rock glass.
Ingredients/Recipe for Green Juice:
2 ½ Fresh Wild Chery Juice
½ Water
½ Honey
2 Kale leaves
Piece of Ginger
1 Clove
Sprinkle of Cayenne Pepper
Directions: Blend all ingredients in a blender and strain with fine strainer.
