The Partridge (with Gray Whale Gin)
+ 1.5oz Gray Whale Gin
+ 1.5oz pear purée
+ 1/4oz ginger liqueur
+ 1oz freshly squeezed lemon juice
+ 1/2 tsp allspice dramShake with ice.
Strain into a Collins glass with ice. Top with 2-3 dashes angostura bitters and soda water. Garnish with fresh sage and a sliced pear.
